We had a chat with co owner Lisa Course to get her tips on the perfect picnic, and she’s also shared her recipe for her victoria sponge pudding!

What are the essential items for a good picnic….
I always think the essential items for a good picnic are good quality ingredients. Sandwiches with nice bread , our favourite sandwich is chicken & bacon mayonnaise with salad. However the bacon has to be smoked! I do like a nice scotch egg as well. You can’t beat some nice kettle crisps. As I am the baker of the family I have to bring a cake, which is normally a Victoria sponge or lemon drizzle. Of course one of my award winning brownies are always included! If my husband is driving i will put a bottle of prosseco on ice the night before! All the food will go in a lovely wicker hamper & of course a nice blanket. I am afraid I have to admit to being a bit of a snob when it comes to the glasses. It has to be proper glass & not plastic!!!
My recipe for Victoria Sponge!
Victoria Sponge Recipe
10 ounces Margarine
10 ounces Castor Sugar
10 ounces Self Raising Flour
Turn oven on to 180 ‘c
Firstly & the most important ingredient make sure you do deep breaths & happy thoughts!!!
Cream the margarine & sugar & vanilla together until light & fluffy.
Add the eggs one by one making sure not to curdle.
Add the flour
Mix all ingredients together.
Put into 2 9 inch sandwich tins
Bake for 38 minutes!
How do you plan the perfect picnic.
We always try to check the weather when we are going on a picnic. However it’s not always right! Our picnics have changed now that our children have grown up. They’re a little more sophisticated! I always make the sandwich son the day but bake the cakes the day before. Put the prosseco on ice. The best things for the perfect picnic are the food,wine & most definitely the company that you are with!
